With the opening of ‘his’ Hoeve de Bies in 2018, Maurice Huynen already caused a culinary earthquake in the Voer region. Two years later, when the sublimely executed French brasserie classics like bisque and steak bearnaise gave way to a fine dining formula, in which the pure flavours of the region play the main role, he did so gently. In both cases, the knowledge and skill of the patron-cuisinier was key, but the part played by maître-sommelier Peterhans van Harinxma should not be forgotten. At Hoeve de Bies, he has been serving an extensive wine list with fine wines from the well-known wine regions since day one; in recent years, more local wines have been added.
With the switch from brasserie to fine dining, Hoeve de Bies also underwent a rigorous renovation in early 2020, exchanging the somewhat rustic interior for a light, sleek and modern one. Not much later, the terrace also underwent a complete overhaul, where you can now enjoy at least as much luxury and an idyllic view of sloping greenery and grazing cows.
Hoeve de Bies was awarded one Michelin star in early 2024.
