The famous Maastricht star restaurant Beluga Loves You has been a household name far beyond the provincial borders for years. In 2019, Servais Tielman took over the business and made his signature immediately tangible and palpable. For instance, the star chef, originally from Heerlen, is known for using local products, always with one ingredient in the lead. Dishes are all high on flavour. Michelin, which awarded the chef one star soon after taking over, calls Tielman a ‘modern chef who transforms bright ideas into bold flavours’.
The 2020 revamped interior of Beluga Loves You is in keeping with the chef’s signature style. Modern, clean, and an ode to the restaurant’s surroundings: the river Meuse, the marl caves and the forest.
