Chef Jan Tournier does what he wants to do, without concessions. And he does it well. His restaurant in the Belgian-Limbourgian town of Lommel enjoys prestige far beyond its borders. This is partly due to its distinctive interior: dark and minimalist, exuding tranquillity, with some greenery here and there and an impressive work of art on the ceiling. Cuchara has something mysterious but is at the same time cosy and convivial.
At the table, you once again fall from one surprise into another. Tournier does not follow a specific cooking style. He follows his instincts. Sometimes that leads him to Japan, sometimes to France and occasionally closer to home. At Cuchara, the tension lies in the variation in structures and flavours, as well as in the consistent perfection of the presentation of the dishes.
