Chef Alex Clevers is a constant factor in top gastronomy in Limburg. In an 18th-century presbytery in Dilsen-Stokkem, he found the place many years ago to offer his guests a warm setting in which his cuisine – French-inspired – comes into its own.
Whenever he sees the chance, Clevers likes to use products from the region, such as in the asparagus season. But it can also come from a little further afield, such as the Anjou pigeon, which is given a fine cuisson. When it comes to cooking, Clevers needs to learn nothing. Using both native and eastern spices, he adds extra tension to French cuisine. This is also reflected in the layout of the plate.
With a rating of 1 Michelin star and 16 points Gault&Millau, Clevers continues to cook at a nice and stable level.
In good weather, lunch or dinner on the beautifully situated terrace is an added experience in a peaceful setting with beautiful views of the river Meuse.
