Chef Edwin’s cuisine is best described as New Dutch Cuisine and recognisable by the use of as many vegetables and herbs from his own herb garden as possible. If the ingredients are not from his own garden, most of them are organic and natural. ONE therefore carries a Michelin star as well as a green star.
