Since 2017, he and his wife Mariska have been running <strong data-start=\"394\" data-end=\"415\">Restaurant Danyel<\/strong>, located in the charming Maastricht district of Sint Pieter.<\/p>\n<p data-start=\"478\" data-end=\"779\">Here, Danyel serves a surprise menu every day\u2014<strong data-start=\"524\" data-end=\"541\">no \u00e0 la carte<\/strong>, just one chef\u2019s choice menu crafted with as many local and regional ingredients as possible. This distinctive concept leads to a sustainable and streamlined way of working: small-scale, without staff, and with complete focus on flavour.<\/p>\n<p data-start=\"781\" data-end=\"1025\">His style is classic with a modern twist: no foams or powders, just pure, honest flavours. Think of perfectly seared veal sweetbreads or a beautifully prepared piece of foie gras\u2014dishes that reflect decades of experience in high-end gastronomy.<\/p>\n<p data-start=\"1027\" data-end=\"1263\">Prefer a vegetarian option? Have a food allergy or specific dietary request?
