He introduced light cuisine with a classic base but, above all, plenty of Asian touches. The fifth flavour element umami took centre stage.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">After that switch in the kitchen and corresponding adjustments to the drinks menu &#8211; ma\u00eetre-sommelier Michelle van de Bunt serves beautiful wines but also dares to alternate that with teas, sake or other drinks &#8211; in the summer of 2022 it was also time to revamp De Leuf&#8217;s interior. The classic surroundings were exchanged for a hip, sleek d\u00e9cor described as Asian aesthetics using local materials and fully in keeping with the dishes and drinks on offer. The focus here is on experience in the restaurant and at the table.
