For over 38 years, Danyel van den Bongard has been in the kitchen—working alongside some of Limburg’s most renowned chefs, as well as in his own restaurants in Maastricht and Roermond. Since 2017, he and his wife Mariska have been running Restaurant Danyel, located in the charming Maastricht district of Sint Pieter.

Here, Danyel serves a surprise menu every day—no à la carte, just one chef’s choice menu crafted with as many local and regional ingredients as possible. This distinctive concept leads to a sustainable and streamlined way of working: small-scale, without staff, and with complete focus on flavour.

His style is classic with a modern twist: no foams or powders, just pure, honest flavours. Think of perfectly seared veal sweetbreads or a beautifully prepared piece of foie gras—dishes that reflect decades of experience in high-end gastronomy.

Prefer a vegetarian option? Have a food allergy or specific dietary request? No worries—although there’s no fixed menu, Danyel is happy to accommodate any dietary needs, as long as they are communicated when making your reservation.
